HEAD CHEF – GREAT OPPORTUNITY – PROFIT SHARE + BASE SALARY
We’re looking for a dynamic and ambitious Head Chef to take charge of the restaurant in our small country hotel. The restaurant has 40 to 50 covers and has been successful but has yet to realise its full potential since new owners took over the hotel in February 2011. A change in roles among the business owners has provided the opportunity for a new Head Chef to take over and really make the restaurant their own.
Three Wells Hotel, near Llandrindod Wells in Mid Wales, has 15 rooms and has seen business grow massively under new, young owners. The newly opened Lakeview Restaurant in the property has proved popular with hotel guests but has not yet been fully marketed to locals, whose custom will be needed if it is to maximise its potential. The current menu is best described as simple fine dining; all food is freshly prepared and much of it is locally sourced. A bar/bistro menu is also served, which is also freshly prepared and includes classic favourites such as burgers, lasagne, Thai curry etc.
We’re looking for a Head Chef who can really put their own stamp on the restaurant. As such you will have a large degree of flexibility with the menu, but you will also be expected to take a leading role in promoting the restaurant, as well as being responsible for sourcing and ordering; health, hygiene and safety; and all other aspects of managing the kitchen. We also employ an assistant chef but you will be expected to work alone at times (during quiet periods) and therefore have to be fully hands-on including getting on with the washing-up etc when necessary.
As well as a base salary of £10,000 you will receive 30% of the gross profit achieved in the restaurant. For the year just gone that would work out an additional £8,000 but that is really a minimum level and that amount would easily rise to £15-20,000 and potentially much, much more if you can make a success of the venture.
The hotel and restaurant are in a rural location with beautiful views, but are just a short 10 minute walk from the local village with pub, shop and post office,; and less than two miles from the county town Llandrindod Wells.
